150g lean/extra lean mince
4-6 basil leaves (I estimate on taste)
1 sprig of fresh thyme
half tsp Jeera seeds (roast slightly in oven and then crush)
1 clove garlic
Salt and pepper to taste
5ml olive oil
1/2 clove garlic
1/8 diced onion
1/2 large tomato
2 cups zucchini (cut into strips)
Mix all meatball ingredients and make into balls.
Use non stick oven tray and place into oven at 240 degrees till cooked at your preferred taste (10-15mins).
For the sauce, heat 5ml olive oil in a pan, add a clove of garlic and sauté diced onion until golden brown (optional: add a chilli for flavour). Add chopped ripened tomato (for extra sweetness).
To serve, pour the sauce over a bed of meatballs and sautéed zoodles. Add salt and pepper to taste.
