Did you know that mushrooms are low in calories and fat and cholesterol-free, mushrooms contain a modest amount of fiber and over a dozen minerals and vitamins! Pretty mean and lean! 

Serves 1


1 large stuffing mushroom (if you’re a female) or 2 large stuffing mushrooms (if you’re a male).

1/4 cup parsley

1 chopped garlic clove

1 zest of lemon 

1/4 cup of olive oil 

1/2 tablespoon white wine/apple cider vinegar 

Pinch of salt and pepper to taste

Handful of spinach

Tsp fat free cottage cheese/hummus


Lightly brush mushroom with olive oil.In a pan sauté your onion and tomato portion with fresh herbs of choice until cooked and formed a paste. Spoon on top of mushroom/s. Cook in Airfryer/grill for 15 minutes or till soft and brown.
Prepare your dressing by combining together parsley, garlic, lemon, olive oil, white wine/apple cider vinegar and a pinch of salt and pepper in a bowl. Serve Mushroom/s on a bed of spinach. Top with a teaspoon of fat free cottage cheese/hummus and drizzle with a tablespoon of dressing! Save the rest of the dressing to use with other dishes.
