Life can be complicated enough, so let’s keep it simple with this easy vegetarian lentil curry recipe! Double up the recipe and pack the extra portion in for lunch. Cook smart, eat smart!

Serves 1


◻️180 g dried brown lentils⁠
◻️ ¼ onion finely sliced ⁠
◻️ 3-4 cloves garlic, crushed⁠
◻️ 1.5-inch piece of ginger crushed⁠
◻️ 1-2 green/red chillies⁠
◻️ 1.5 teaspoons of cumin seeds⁠
◻️ 1 teaspoon coriander powder⁠
◻️ 1 teaspoon garam masala⁠
◻️ ½ teaspoon turmeric powder⁠
◻️ 1 tablespoon of olive oil⁠
◻️ Salt to taste ⁠


◻️Wash and soak the lentils ⁠
◻️Heat the oil in pot on medium heat and add the cumin seeds and cook.⁠
◻️Add the chopped onion and cook for a few minutes.⁠
◻️Then add the chilli, ginger and garlic paste and cook until the mixture becomes golden brown.⁠
◻️Add the coriander powder, garam masala and turmeric powder and cook for a few minutes. ⁠
◻️Add the soaked lentils to the mixture, add water and salt and allow to cook on medium heat until lentils are cooked. ⁠
◻️Garnish with chopped coriander leaves.
